These are ingredients that I always have in the fridge and can be used to make many meals. My Vegie Rice Paper rolls are so easy to whip up any time of the day, but perfect for lunch! These are a must make!
Ingredients:
Slice all ingredients according to directions.
Place one wrapper in a shallow bowl of water for 10 seconds, make sure you wipe the excess water off the wrapper.
Place the 1/3 or each of the ingredients starting with the Spinach then the rice etc. Lastly drizzle with lime.
Roll the wrappers from the outside in, then roll to form a cigar shape. Repeat this whole process 3 times.

This is my favourite dipping sauce for anything, it is so versatile and really brings vibrancy to any dish!

- 1/2 Capsicum julienned
- 1/2 cup Bean Shoots
- 3 Mint leaves finely sliced

- 1 Cup Cooked Quinoa or Rice

- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp ginger grated

- 1/4 cup coconut milk
