My favourite treat of a morning is pancakes with maple syrup and berries, but I had to come up with a recipe that suited my love for pancakes without so much of a guilt. These pancakes are light and really satisfy my urge for them on a Sunday morning.
Ingredients:
1/2 cup Milk
1tsp vanilla
1/4 cup almond meal
3/4 cup Oat flour
1 to 2 tsp chia seeds (depending on how thick or runny you like it)
2 tbsp rice flour
1 tbsp agave syrup (or any other sweetener)
Coconut oil (for pan)
Method:
Combine all ingredients except the coconut oil in a bowl and stir until combined. Once all is combined let the batter rest for 5 mins or longer if you want a more thick pancake.
Cook on a hot fry pan with coconut oil and cook until both sides are golden brown.
Serve with berry syrup;
in a saucepan place 1 cup of blueberries and 2tbsp agave syrup, cook until blueberries have broken down. serve with the hot pancakes
